Elegant enough for a dinner party or a romantic dinner for two and easy enough to prepare on a busy weeknight.
Bacon Wrapped Scallops
Prep: 10 minutes
Cook: 8 minutes
1 lb. bacon
1 tsp. smoked paprika
1. Rinse scallops under cold water. Cut bacon strips in half.
2. Wrap each scallop with 1/2 strip of bacon. Skewer 2–3 each bacon wrapped scallop. Sprinkle with smoked paprika, seasoning both sides.
3. Heat olive oil in a large skillet. Sear scallops until golden and bacon is crispy, 3-4 minutes per side.
