Earthy, nutty farro give substance to this dish while pomegranate arils provide a gorgeous pop of color and a sweet-tart surprise in each bite.
Savory Pomegranate Farro
Prep: 15 minutes
Cook: 45 minutes
2 Tbsp. POM Wonderful 100% Pomegranate Juice
2 Tbsp. red wine vinegar
1/4 cup extra virgin olive oil
1/8 tsp. kosher salt
1 clove garlic, minced
1 cup farro
1 cup POM Wonderful 100% Pomegranate Juice
1 cup water
1/2 tsp. kosher salt
1 yellow bell pepper, diced into 1/2 pieces
2 celery stalks, sliced into 1/4 inch pieces
2 scallions, thinly sliced
1 cup POM Pomegranate Arils
1 cup baby arugula
1. For the vinaigrette: Mash garlic and salt together to make a paste. Transfer to a bowl and whisk in the POM Wonderful 100% Pomegranate Juice and vinegar. Slowly whisk in the olive oil, set aside.
2. For the farro: In a large saucepan over medium-high heat, bring POM juice, water, salt and farro to a boil. Reduce to a simmer and cover. Cook until almost all the liquid is absorbed, 30 minutes. Set aside, covered, for 15 minutes.
3. In a large bowl, stir the cooked farro with the bell peppers, celery, scallions, POM Pomegranate Arils, and ¼ cup of the vinaigrette. Just before serving add the arugula and garnish with more POM. Serve any remaining vinaigrette on the side.
