Asparagus Caprese
Serves 6

1 lb. asparagus, stalks trimmed
Our Family Extra Virgin Olive Oil, for drizzling
2 cups mozzarella cheese, shredded
2 cups cherry tomatoes, halved
balsamic glaze, drizzle
Thinly sliced fresh basil, for garnish
salt and ground black pepper, to taste

1. Heat grill to high heat
2. Coat asparagus and halved cherry tomatoes in olive oil, salt and pepper.
3. Place on a grill pan. Turn occasionally until tender and slightly charred.
4. Top with shredded mozzarella and allow cheese to melt.
5. Remove from grill. Top with chopped basil and drizzle with balsamic glaze.
