Warm and hearty, and perfect for serving a crowd, chili was made for sharing with friends and family while tailgating, at fall potlucks and around the dinner table. Simply delicious, and heartwarming – that’s what fall food is all about.

Stemilt’s Gala apples, sweet potatoes, and red bell peppers add nice, subtle sweetness to this meatless chili without any added sugar. The flavors perfectly complement the smoky chipotle and spicy nutmeg, while two kinds of beans add some heft thanks to a filling protein and fiber combination that sticks with you for hours. It’s an unexpected but delicious fall twist on chili that you’ll crave all season long.

Crockpot Apple & Sweet Potato Chili
Prep: 10 minutes
Slow Cook: 6 hours
Serves: 8 (makes 8 cups)

1 large Gala apple
1 medium sweet potato
1 medium yellow onion
1 red bell pepper
4 cloves garlic
1 can (15 oz.) black beans
1 can (15 oz.) kidney beans
1 cup vegetable broth
3 Tbsp. apple cider vinegar
3 tsp. chili powder
3 tsp. ground cumin
2 tsp. paprika
1 tsp. chipotle powder
1 tsp. ground nutmeg

1. Dice apple, sweet potato, onion, and bell pepper in uniform pieces. Mince garlic.
2. Place apples, sweet potatoes, onion, bell pepper and garlic in the pot of a slow cooker.

Add beans (including liquid), broth, vinegar, and spiced. Stir and cover. Cook on high 4 hours, or low 6-8 hours.

Top with sliced Gala apples, a bit of sour cream, or try some shredded cheddar and cilantro or avocado. Served with cornbread on the side for a complete meal.
