Use your Martin’s rotisserie chicken in this super simple and super delicious soup!
Cheesy Chicken Taco Soup
1 Tbsp. Olive Oil
½ medium onion, chopped
½ red bell pepper, chopped
2 (10 oz.) can rotel diced tomatoes and green chilies
3 cups chicken broth
1 tsp. garlic powder
1 tsp. ground cumin
1 tsp. smoked paprika
1 Tbsp. chili powder
8 oz. cream cheese, softened
2 cups Martin’s rotisserie chicken, shredded
salt and pepper, to taste
1. Add oil and onion to a stock pot and sauté over medium high heat for 5 minutes. Once soft, stir in the remaining ingredients, except cream cheese, chicken, salt and pepper.
2. Increase heat to high and bring to a boil. Reduce heat and simmer for 5 minutes
3. Add cream cheese to the soup, stirring until melted.
4. Add chicken and salt and pepper to taste.
