Pumpkin Spice Pancakes make the best fall breakfast. Thick, fluffy, and filled with cozy spices, these pancakes are simple to make and so delicious!

Pumpkin Spice Pancakes

Serves: 4

1 cup Our Family® Original Complete Pancake & Waffle Mix
3/4 cup Our Family® 100% Pure Pumpkin
2 1/4 teaspoons Our Family® Pumpkin Pie Spice plus additional for garnish (optional)
Our Family® Butter Flavored No Stick Cooking Spray
1/2 cup Our Family® 100% Pure Vermont Maple Syrup
1/2 cup Vanilla Nonfat Greek Yogurt
Our Family® Chopped Pecans for garnish (optional)

1. In large bowl, prepare pancake mix with 3/4 cup water as label directs; whisk in pumpkin and pumpkin pie spice until smooth. Makes about 2 cups.

2. Heat griddle or large nonstick skillet over medium-low heat; spray lightly with cooking spray. In 2 batches, using a 1/4-cup measuring cup, pour batter onto griddle; cook 5 minutes or until golden brown and set, turning once and spraying griddle with cooking spray as needed between batches. Makes 8 pancakes.

3. Serve pancakes drizzled with syrup and topped with yogurt garnished with pecans and/or pumpkin pie spice, if desired.
