Everything Hummus-Crusted Chicken & Kale Salad

Serves: 4

½ cup Fresh & Finest by Our Family® Everything Seasoned Hummus
½ tsp lemon zest
¼ cup Our Family® Extra Virgin Olive Oil
4 Boneless, Skinless Chicken Breasts
1 bunch lacinato or curly kale
2 garlic cloves, minced
2 Tbsp Our Family® Lemon Juice
1 tbsp. Our Family® Reduced Sodium Soy Sauce
½ tsp Our Family® Salt
¼ tsp ground Our Family® Black Pepper Spice Grinder
1 cup halved Our Family® Grape Tomatoes
¼ cup Our Family® Fresh Grated Parmesan Cheese
Lemon wedges for garnish (optional)

1. Preheat oven to 450°. In small bowl, stir hummus and lemon zest.
2. Drizzle 2 tablespoons oil in bottom of 13 x 9-inch baking dish. Place chicken in prepared dish; spread with hummus mixture to coat. Bake chicken 25 minutes or until internal temperature reaches 165°.
3. Strip kale leaves from their stems; discard stems and thinly slice leaves crosswise. In large bowl, whisk garlic, lemon juice, soy sauce, salt and pepper; whisking constantly, slowly drizzle in remaining 2 tablespoons oil until emulsified. Add kale; using hands, massage garlic mixture into kale to coat. Fold in tomatoes and cheese. Makes about 4 cups.
4. Serve chicken over salad garnished with lemon wedges, if desired.
