Bruschetta, 12 servings
¼ cup extra virgin olive oil
1 ½ tsp. minced garlic
8 roma tomatoes, diced
¼ cup fresh mozzarella, diced
1 Tbsp. balsamic vinegar
¼ cup fresh basil, chopped
Salt & pepper
1 loaf fresh bread, sliced into ½ inch slices

1. Heat olive oil in a small skillet over medium-low heat. Add garlic and sauté until golden. Let cool.
2. Chop tomatoes and basil. Add to cooled garlic. Add parmesan, balsamic vinegar, salt and pepper. Toss well.
3. Serve right away over fresh bread slices. Option to toast bread, if desired. Garnish with parmesan cheese or basil.
