1. Prepare outdoor grill for direct grilling over medium-high heat. In small saucepot, melt butter over medium-high heat. Add shallot and jalapeño; cook 3 minutes or until tender, stirring occasionally. Add corn starch; cook 1 minute, stirring frequently. Reduce heat to medium-low. Stir in 4 slices pepper Jack cheese, cheese product, milk, green chiles with their juice and hot sauce; cook 10 minutes or until cheese is melted and smooth, stirring occasionally. Cover to keep warm. Makes about 1 1/2 cups cheese sauce.

2. In large bowl, gently mix beef, seasoning, garlic powder, black pepper and onion powder; do not over mix. Form ground beef mixture into 8 (1/4-inch-thick) patties; make shallow indentation in center of 4 patties. Place 1 pepper Jack cheese slice into each indentation; top with remaining 4 patties and press edges together to seal. Spray both sides of patties with cooking spray.

3. Place patties on hot grill rack; cover and cook 12 minutes or until internal temperature of burgers and filling reaches 160°, turning once. About 2 minutes before burgers are done, top burgers with bacon and place buns, cut side down, on hot grill rack; cover and cook 2 minutes or until toasted.

4. Stir cheese sauce. Serve burgers in buns topped with cheese sauce and toppings, if desired. Makes 4 burgers.
