Air Fryer Fish Nuggets

Air Fry : 16 minutes
1 pound cod fillets, cut into 1 1/2-inch pieces, thawed if necessary
1 tablespoon plus 1 teaspoon lemon pepper seasoning
2 large eggs
1 1/2 cups Our Family® Plain Panko Bread Crumbs
1 cup Our Family® All-Purpose Flour
Nonstick cooking spray
Chopped fresh parsley for garnish (optional)
Lemon wedges and/or Our Family® Tartar Sauce for serving (optional)
1. Preheat 3-quart air fryer to 400° for 5 minutes; sprinkle cod with 1 teaspoon seasoning.
2. In wide, shallow dish, whisk eggs. In separate wide, shallow dish, stir breadcrumbs and remaining 1 tablespoon seasoning; place flour in third wide, shallow dish. Dredge cod in flour, shaking off excess, then dip in eggs allowing excess to drip off, then in breadcrumb mixture to coat; place on rimmed baking pan and spray both sides with cooking spray.
3. In 2 batches, air fry cod 8 minutes or until golden brown and internal temperature reaches 145°, turning once. Makes about 20 nuggets.
4. Serve nuggets garnished with parsley along with lemon wedges and/or tartar sauce, if desired.
